  • 500 grams of Mutton, on the bone, washed and cleaned
  • 1/2 cup Curd (Dahi / Yogurt)
  • 1/2 teaspoon Turmeric powder (Haldi)
  • One tablespoon Lemon juice
  • Salt, to taste
  • 6 Dry Red Chillies
  • 2 Cloves (Laung)
  • One teaspoon Whole Black Peppercorns
  • One teaspoon Methi Seeds (Fenugreek Seeds)
  • Two teaspoon Coriander (Dhania) Seeds
  • One teaspoon Cumin seeds (Jeera)
  • Six cloves Garlic
  • One tablespoon Tamarind Paste
  • Two tablespoons Ghee
  • Two sprig Curry leaves
  • Two teaspoons Jaggery










Instructions:



  1. Marinate the mutton in a mixture of curd, turmeric powder, lemon juice, and salt. Mix well and refrigerate for at least 2 hours.
  2. In a pan, dry roast the red chillies, cloves, black peppercorns, methi seeds, coriander seeds, cumin seeds, and garlic until fragrant.
  3. Grind the roasted spices into a fine powder.
  4. Heat ghee in a pan and add the curry leaves. Sauté for a few seconds.
  5. Add the marinated mutton and cook for 10-15 minutes until the meat is browned on all sides.
  6. Add the ground spice powder, tamarind paste, jaggery, and salt. Mix well and cook for another 10-15 minutes.
  7. Add water if required and cook until the mutton is tender and the gravy is thick.
