Andhra Pepper Chicken Recipe:



Ingredients:



  • 500 grams of Chicken, chopped into cubes with bone
  • Ten cloves Garlic
  • 2 inch Ginger
  • 1 Lemon juice extracted
  • 1/2 teaspoon Turmeric powder (Haldi)
  • 1/2 teaspoon Salt


For Pepper Chicken Masala:


  • 2 Onion, thinly sliced
  • Four cloves Garlic, finely chopped
  • 1 inch Ginger, finely chopped
  • 2 Green Chillies, slit
  • Salt, to taste
  • Three sprigs of Curry leaves, roughly torn
  • 2-1/2 tablespoons Whole Black Peppercorns, coarsely pounded
  • Two teaspoons Coriander Powder (Dhania)
  • Four tablespoons Oil to cook



To Garnish:


  • Six sprig Coriander (Dhania) Leaves, chopped for garnish
  • One teaspoon of Whole Black Pepper Corn, coarsely pounded
  • One teaspoon of Lemon juice


 










Instructions:



  1. Wash the chicken cubes with water and pat dry using a paper towel.
  2. In a blender add ten cloves of garlic, 2 inches of ginger, and the juice of 1 lemon. Blend the mixture until it becomes a smooth paste.
  3. Marinate the chicken with the garlic-ginger-lemon paste, 1/2 teaspoon of turmeric powder, and 1/2 teaspoon of salt. Mix well and set it aside for 30 minutes.
  4. In a pan, heat 4 tablespoons of oil and add thinly sliced onions. Fry the onions until they turn golden brown.
  5. Add finely chopped garlic and ginger, slit green chillies, salt, and curry leaves to the pan. Fry until the raw smell of garlic and ginger disappears.
  6. Add coarsely pounded black peppercorns and coriander powder to the pan. Mix well and fry for 1-2 minutes until the spices are well combined.
  7. Add the marinated chicken to the pan and mix well. Cover the pan and cook for 10-15 minutes on medium heat until the chicken is cooked through and the masala has thickened.
  8. Once the chicken is cooked, garnish with chopped coriander leaves, coarsely pounded black pepper, and lemon juice.
  9. Serve hot with rice or roti.
