           Home-made Mutton Rogan Josh

Rogan Josh is a famous mutton/lamb dish from the Kashmiri food made during the virus cold weather months. Loaded with flavors, this is best presented with roti, naan, or pulao. There are various varieties of this dish accessible. A few varieties have onions and tomatoes in them while others won't.



Ingredients:





  • 1 kg mutton, cut into medium pieces
  • 4 tbsp mustard oil
  • 2 tbsp garlic ginger paste
  • Eight garlic cloves, chopped
  • Four cardamom pods
  • 2-inch cinnamon stick
  • Four cloves
  • Two bay leaves
  • 1 tsp black pepper
  • 1 tsp fennel seeds
  • Two medium onions, chopped
  • 2 tbsp Kashmiri red chili powder
  • 1 cup yogurt
  • 2 tbsp ghee
  • 1 tsp garam masala powder
  • Salt to taste









Instructions:




  1. Heat the mustard oil in a large pot over medium heat. Once the oil is hot, add the cardamom pods, cinnamon stick, cloves, bay leaves, black pepper, and fennel seeds. Fry the spices for a minute or until fragrant.
  2. Add the chopped onions to the pot and cook until they turn golden brown. Now add the garlic and sauté for a minute.
  3. Add the mutton pieces to the pot and stir well to coat them with the onion and spice mixture. Cook for 5-6 minutes or until the mutton starts to brown.
  4. Add the garlic ginger paste and Kashmiri red chili powder to the pot and mix well. Cook for another 2-3 minutes.
  5. Beat the yogurt until smooth and add it to the pot. Mix well and cook for 5-7 minutes or until the yogurt is well incorporated and the mixture starts to simmer.
  6. Add enough water to the pot to cover the mutton pieces. Season with salt to taste and stir well.
  7. Cover the pot with a lid and cook on low heat for 1-1.5 hours or until the mutton is tender and cooked thoroughly. Stir occasionally and add more water if required.
  8. Once the mutton looks soft and tender, remove the lid and add ghee and garam masala powder to the pot. Stir well and cook for another 5-7 minutes or until the gravy thickens and the oil starts to separate.
  9. Garnish with chopped coriander leaves and serve hot with rice or naan.
